Ingredients for Chicken tagine:

1 kg of chopped chicken
1 red bell pepper
2 onions
200 g pitted prunes
200 g of dried apricot
3 garlic cloves
extra virgin olive oil
500 ml of water
2 teaspoons mixture of spices that can include cumin, cardamom, nutmeg, paprika, ginger, pepper, cinnamon, etc. You can prepare your mixture or buy it for a superstore
Salt to taste
optional: 2 cinnamon sticks (you can buy them here )

250 g of couscous
250 g of water or chicken broth

Step by Step Instructions

  1. Season the chicken and brown it in the tajine with a splash of oil. We turn it over so that it browns well on all sides, remove and reserve. Add a little more oil if necessary, and sauté the chopped onion, pepper, and garlic.
  2. When the vegetables are cooked, we salt, put the chicken back, add the Ras el Hanout (or the mixture of spices that you are going to use), the cinnamon and the anise, approximately 2 glasses of water, cover, and let it cook over low heat for 20 minutes. Add the plums and dried apricots, if we see that a little more hot water is a little dry, stir, cover again and cook 15 more minutes.
  3. To prepare the couscous, in a saucepan we heat the water or chicken broth. When about to boil, but before it boils, we turn off the heat, add the couscous, take care that it is completely submerged in the liquid, cover, and let it rest for 5 minutes. After this time, with a fork we shelve the couscous so that it loses, we add it to the tajine, stir and serve.
  4. We can also serve the tajin and couscous separately and each diner can serve themselves to their liking.
