Ingredients for Cafe de olla:
- 4 cups of water
- 3 oz. piloncillo / panela as ⅓ cup
- ½ Mexican cinnamon stick
- 4 tablespoons of ground coffee

Step by Step Instructions
- In a medium saucepan add the water, cinnamon, and brown sugar; Put over medium heat and boil until the brown sugar dissolves (about 7 minutes).
- When the water starts to boil add the coffee; turn off the heat and stir well.
- Cover the pot and let it rest for about 5 minutes. When serving, pass the coffee through a strainer.
- If you want to add some liquor, Kahlúa coffee liquor is a very good option.
