Ingredients for Pinchitos:
- 1 kg of chicken breast
- 1 onion
- 3 garlic cloves
- 2 cayenne (optional)
- Extra virgin olive oil
- 1 teaspoon of cumin
- 1 teaspoon dried parsley
- ½ teaspoon black pepper
- ¼ teaspoon ginger
- 1 teaspoon of sweet paprika
- A pinch of hot paprika
- A pinch of cinnamon

Step by Step Instructions
- Spice mix for Moorish skewers
Put the cumin, parsley, pepper, ginger, sweet and spicy paprika, and cinnamon in a container. We close the jar and shake. - Marinate the chicken
In a bowl, cut the chicken breast. Try to make 2 and half cm piece approximately. Now add onion, chopped garlic and the spices and mix them well. Now add drizzle of extra virgin oli oil and mix it very well. We cover and store in the fridge for a few hours, I always do it the day before. - We prepare the Moorish skewers
Use wooden skewers if iron or metal skewers are not available. To do this, we spread them with a little oil, this will make that when we bite the meat, it comes off easily from the skewer. We puncture on each skewer about five pieces. - Cook the chicken skewers
We put the grill very hot and cook the skewers on both sides. Do not throw away the onion and the dressing that remains in the container, you also cook it and serve it together with the skewers and some pieces of bread.
