Ingredients
- 500g ripe bananas
- 25g sugar
- 1/5 teaspoon salt
- Yellow food coloring (optional)
- 110g tapioca starch
- 15ml water
- 1 tablespoon tapioca pearls (12g)
- 2 tablespoons water (30ml)
- 400ml coconut milk
- 2 tablespoons sugar (30g)
- 1/2 teaspoon salt (2g)
- 1 teaspoon corn starch (5g) (optional)
- 2 pandan leaves (optional)
Equipment:

- Silicone form
Step-by-Step Instructions
Step 1
Peel the bananas and slice them into 2-3mm thick pieces. If using Plantains, ensure they are ripe.
Step 2
In a bowl, combine the banana slices, sugar, salt, and yellow food coloring (if desired). Mix well and let the mixture chill for 30 minutes.
Step 3
After 30 minutes, add the tapioca starch to the banana mixture. Mix well.
Step 4
Prepare boiling water in a steamer.
Step 5
Add 15ml of water to the banana mixture and mix until well combined.
Step 6
Place the banana mixture in a 20cm diameter silicone form, ensuring an even distribution of the banana slices. Tap the form on the table to remove air bubbles.
Step 7
Steam the cake over medium heat for exactly 20 minutes.

After steaming, check if the cake is cooked by inserting a bamboo skewer into the center. If it comes out clean, the cake is done. Remove the steamer from the heat and let the cake cool completely.

In the meantime, prepare the coconut sauce. In a small bowl, combine tapioca pearls with 2 tablespoons of water. Shake gently to coat the pearls.

In a saucepan, combine coconut milk, sugar, salt, cornstarch (if serving immediately), and pandan leaves. Stir continuously over low heat until the sauce starts to boil.

Add the soaked tapioca pearls and water into the sauce. Stir gently and let it simmer for 1 minute.

Turn off the heat and give the sauce a quick stir. Set aside.

Once the cake is completely cool, remove it from the silicone form.

Serve the steamed banana cake with a generous amount of coconut sauce. Optionally, you can top it with crushed roasted peanuts or sesame seeds.
