Papadzules Ingredients:
Pepita Sauce Ingredients:
250 gr. pumpkin seed for papadzul
Epazote
2 tsp consomme
Water
Tomato Sauce Ingredients:
½ kg of tomato
150 grams of onion
Water
Epazote
2 tsp consomme
1 xcatik or habanero chili
Salt
Tacos Ingredients:
8 eggs boiled and diced
1/4 kg. tortilla
Equipment
- Small bowl
- Electric mixer (or hand mixer if you don’t have electric one)
- Large skillet
Step by Step Instructions
Dilute the seed with the consomme and a little water over the fire and add a sprig of epazote, salt, and pepper.
- We make a tomato sauce by liquefying the tomato, onion, consommé, chili, and salt and we cook it with the epazote.
- We prepare the egg tacos, passing the omelet through the seed first, we assemble the taco by putting the egg inside, and to serve it is bathed with white sauce and tomato sauce.
