Tabbouleh is a dish that is popular in the Middle East, but you can also find delicious versions of it closer to home. One country known for making tabbouleh is Morocco, where they have their own unique way of preparing it. Just like in many other Arab countries, there are many different ways to make tabbouleh. However, for this tabbouleh salad recipe, we have chosen a simple and easy preparation using basic ingredients It’s just as good, if not better, than the tabbouleh at my favorite Middle Eastern restaurant. I think you’ll agree if you give it a try.

Tabbouleh is a salad made with fresh herbs, bulgur, cucumber, and tomato. The main ingredient is parsley, which gives it a bright green color. It’s dressed simply with olive oil and lemon juice, making it light, refreshing, and packed with healthy ingredients.

Ingredients for Tabbouleh salad recipe:

  • 250 grams of couscous
  • 3 medium-sized tomatoes
  • 8 cups flour
  • 3 garlic cloves
  • 1 large onion
  • 1 red bell pepper and 1 green bell pepper
  • 150 milliliters of extra virgin olive oil
  • Juice of 3 lemons
  • Lettuce
  • Salt

Equipment:

  • Large and small bowl
  • Cutting board
  • vegetable chopper
  • knife

Step-by-Step Instructions

Step 1

Chop the tomatoes, bell peppers, onions, and garlic into small pieces. Put them in a bowl.

Step 2

Cook the couscous in water (or vegetable broth) until it absorbs all the liquid. Keep the pot covered while cooking.

Step 3

Once the couscous is cooked, drain it well and put it in a deep dish.

Step 4

Chop some parsley and add it to the couscous. Pour in the olive oil and lemon juice. Mix everything well.

Step 5

Add salt to taste and give it another stir. Let it rest in the refrigerator for about two hours.

Step 6

When you’re ready to serve, place the tabbouleh on top of some lettuce leaves.

Step 7

Grain-free tabbouleh

Ingredients:

  • 1 cauliflower (1/4 cauliflower per person)
  • 1/2 red bell pepper
  • 1 green pepper
  • 1 red onion
  • 1 avocado
  • 1 tomato
  • capers (optional)
  • Mackerel
  • parsley
  • coriander (optional)
  • Sea salt
  • pepper
  • 2 lemons
  • extra virgin olive oil (better organic)

Preparation method:

Step 1

Remove the stem from the center of the cauliflower and separate the stems.

Step 2

Wash the cauliflower and remove the stems/trunks (we are left with only the cauliflower florets).

Step 3

Grate/chop the cauliflower to rice/couscous size.

Step 4

Cook the cauliflower (optional) for a few minutes in a pan with a little oil until you get an al dente texture (to avoid the microwave) and let it cool.

Step 5

Cut the red pepper, green pepper, red onion, tomato, and avocado into small squares and mix with the cauliflower.

Step 6

Add the capers (optional), the mackerel, a handful of chopped parsley, and a handful of cilantro (the latter is optional, you can change it for mint).

Step 7

Season with salt and pepper.

Step 8

Prepare a dressing with 2 squeezed lemons, olive oil, and a splash of water and add.

Step 9

Let’s cool and enjoy!

Tabbouleh can last for 2 to 3 days in the refrigerator. Make sure to store it in a sealed container or covered with plastic wrap to keep it fresh.

Tabbouleh goes well with many foods. You can try it with grilled meats like chicken or lamb, falafel, hummus and pita bread, grilled vegetables, Mediterranean-style platters with feta cheese and olives, fish or seafood, or even add a dollop of yogurt sauce for extra flavor. Be creative and find your favorite combination!
