Ingredients for Kabab koobideh:

  • 500 g of lamb or beef
  • 2 large onions (grated)
  • 1 garlic clove (minced)
  • 1 large egg (beaten)
  • 4 medium tomatoes
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon turmeric (optional)
  • Sumac (optional)

Equipment

  • Large bowl
  • Bar.bq stand
  • Skewer

Step by Step Instructions

  1. Mix the meat, garlic, salt, eggs, pepper, onion, and turmeric well and leave in the refrigerator overnight (or for several hours).
  2. Pass the meat on a skewer and knead it, leaving it elongated. Pass the tomatoes on another skewer. Grill them for about five minutes, turning frequently. (If skewers are not available or grilling is not possible, the koobideh kebab-e can be prepared in long portions by putting it on the aluminum foil and roasting it at high temperature in the oven. The oven should be preheated and kebab -e koobideh should be placed as high as possible near the source of the heat. Again, turning them a few times and your kabab koobideh recipe oven made is ready.)
  3. Serve with a hot lolly or Middle Eastern bread. If served with polo, you can sprinkle with sumac. If kabab-e koobideh was made in an oven, the broth can be poured over lolly or bread.
