- For the salmon cake: 100 g of fresh salmon (without bones or skin)
- 100 g of smoked salmon
- 100g of flour
- 1 tablespoon of yeast
- 1 glass of milk
- 40g butter
- 2 eggs
- 1/2 teaspoon ground cumin
- Salt and pepper
- For the avocado topping: 2 ripe avocados
- 1 lemon
- 1 salad tomato
- 50 g toasted almond kernels
- Salt and pepper
- Curly nozzle
Mix the flour, yeast, cumin, and butter in a bowl, and do it vigorously until it has a texture similar to that of an ointment. Keep in mind that until you have a homogeneous mixture you should not continue.
Now, add the eggs, the milk and the salmon finely chopped with the knife, for which an older person must help you. Add salt and pepper, and mix well.
Now place cupcake capsules on a mold, fill them with the dough a little more than half, and take them to the preheated oven at 180º C for between 20 and 25 minutes approximately. Ask an adult for help to put them in the oven.
When you take them out of the oven, let them cool and remove the paper from the muffins. Wrap the base of the cupcakes with slices of smoked salmon.
Prepare the avocado topping. Cut the avocados in half and remove the skin and pit. Don’t do it alone, ask an adult for help. Put it in a bowl and mash it with the tines of a fork. Season with a pinch of salt, pepper, and a few drops of lemon juice. Introduce the dough into a pastry bag with a curly nozzle.
You just have to decorate the cupcakes with this avocado puree. And it ends up decorated with some small tomato cubes and some toasted almond grains. Enjoy!
